Curried Chicken, Rice, Grape and Cashew Salad

CURRIED CHICKEN, RICE, GRAPE AND CASHEW SALAD
I picked up this recipe from my first drill team coach in high school, Carol Johnson. It’s been a staple in my recipe collection and was also a favorite at my meal delivery business.

Ingredients:
- 2 cups cooked white rice
- 2 cups cooked chicken, medium dice
- 2 cups scallions, sliced
- 2 cups seedless red grapes, sliced in half
- 2 cups celery, chopped
- 2 cups roasted cashews
- 2 cups mayonnaise
- 2 tsp. dried curry powder
- salt and pepper to taste
- bed of lettuce for garnish (optional)
Instructions:
- Combine all ingredients minus the lettuce, in a large bowl. Stir to combine and season to taste.
Notes:
Wait to add nuts until just before serving to keep their crispiness.
