Instant Pot Beef Stew

A family favorite

I know I can always count on this dish as a stand in any night of the week, especially in the winter months. Warm tender beef chuck roast with tender carrots and potatoes in a rich and savory sauce. All done in under and hour in the Instant Pot.

Instant Pot Beef Stew

Want the richness of a slowly braised beef stew but don't have the time or energy to create it? This recipe comes together in a fraction of the time of a traditional beef stew. And it's Whole30 compliant!

Ingredients:

  • 2 lbs beef chuck roast cut into 2" cubes
  • Kosher salt and pepper
  • 1-2 T avocado or olive oil
  • 1 yellow onion, thinly sliced
  • 1 lb white or cremini mushrooms (optional), cleaned and quartered, stems removed
  • 2 T tomato paste
  • 2 cloves garlic, minced
  • 1/8 cup coconut aminos
  • 1 tsp red boat fish sauce
  • 1 cup beef stock
  • 1 fresh thyme sprig or 1 tsp dried
  • 1 bay leaf
  • 1/4 cup Italian parsley, roughly chopped
  • 1/2 lb Yukon Gold potatoes, quartered
  • 2 carrots, peeled and quartered into large chunks.

Instructions:

  1. In a large bowl, toss the beef chuck with a generous sprinkle of salt and pepper.
  2. Set Instant Pot to "saute" setting. Add oil to the pot. Add the beef in two batches, making sure the beef does not crow in the bottom of the pot. Brown 2-3 minutes on each side. Remove and continue with the second batch. Remove and set aside.
  3. Add more oil to the pot if need be. Add onion and mushrooms if using. Sauté a few minutes to pick up the fond on the bottom of the pot.
  4. Add the beef back to the pot. Add all remaining ingredients through the bay leaf. Toss to coat.
  5. Place lid on Instant Pot and turn off, then set to Manual, 35 minutes. Make sure the valve is shut and walk away.
  6. After the timer goes off, let pressure come down on its own, 5-10 minutes. Release steam manually after 10 minutes if the peg hasn't dropped.
  7. Remove all ingredients except liquid.
  8. Add carrots and potatoes, place lid back on Instant Pot, and shut valve. Set a manual time for 3 minutes. When the timer goes off, release steam manually.
  9. Add all ingredients back to the pot. Season to taste and serve hot.
